Solo cheese with red wine

If you were to pair a cheese with a prototypical California red wine (ripe, bold, etc), whats the best all around? I imagine that there might be certain cheeses which might match up better with certain wines, but there are only a few cheeses one can keep in a fridge at a time before they get old.........

I find that I now have good access to a lot of greate cheeses but would like some pointers. I've been pairing Stilton with various reds, and it's good but a little variety would be nice...........

I think I would chose a Piave or Montasio. Reggiano Parmesan is my favorite cheese and works well, too, but not quite as well as the others with certain varietals.

Going in a different direction, really sharp, high quality aged cheddar can also be a great pairing with typical CA reds.

Obviously Stiliton is a great pairing, but you already mentioned that. Milder forms of Rocqufort can also work well with a variety of CA reds.

Frankie recently got me hooked on manchego, and while I haven't yet had it with CA cab, I gotta believe it would be a great combo.

Manchego is a great cheese to have with CA cabs and Bordeaux . If you don't buy the really aged types it does not overwhelm the wines.

I like Humboldt Fog with Pinots and Burgs.

Parmesano Reggiano and Manchegano get my vote. They would go with Zinfandel as well as California Cab, Bordeaux

I tend to agree with that, but I would put on a 'soft-ripened' stipulation. Fresh chevre can easily be overpowered by several CA reds, imo.

Try a Clisson (this cheese should be DavidN's favorite). With huge California or Australian reds its a surprisingly fantastic match.

On the subbject of Manchego..it's really great when marinated:

1 large jar
1 Lb. thinly sliced good Manchego
2 garlic cloved crushed
variety of good quality olives
couple of roasted peppers
fresh thyme and bay leaf
2 cups good olive oil
S and P


FILL HER UP and marinate for about 3 days..add a French baguette and a bottle of wine..Mmmm
