| I picked these up at Whole Foods based upon a neighbor's recommendation. Anyone had these? I'm gonna throw them on the grill like beef. I know that there's less fat than beef, so don't cook past medium rare. Any other suggestions? Pairing other than Cab? | | |

| I almost bought a bison strip steak at Whole Foods tonight (went with veal loin chops at the last second). How did the bison turn out? I've been considering switching my beef purchases to bison on account of the lower fat/cholesterol.

| The bison rocked! I was surprised that it tasted EXACTLY like beef. I was expecting a bit more "gamey" flavor. Just don't cook it past medium. We had ours about medium rare and it was great. I'd do these again in a heartbeat. Is there documentation that bison is "better for you" than beef? | | | |

| Bison won't be gamey unless it is wild. Farm Raised Bison eat the same as cattle, hence, they taste the same as cattle. | | | |

| No, Mad Buffalo.  Seriously though, prion based conditions are not exclusive to cattle. Deer and antelope in the Midwest are currently becoming increasingly afflicted with Chronic Wasting Disease, another prion disease. I am not sure about American Bison, but it would not surprise me. | | | |

| I love Bison. Especially the burgers. It seems to be more prolific in points West, especially Colorado. Used to be a decent restaurant there called the Denver Buffalo Company with several different buffalo cuts. Not sure if it's still open. | | | |

| Pretty sure Denver Buffalo Company is closed. Buckhorn Exchange still offers many different cuts, or at least they did last time I was there.
Maybe we will get an update, TJ is thinking about going there tonight.

| The best steak I've ever had was a bison strip at the Mirror Lake Inn last month. Absolutely amazing. Much like beef to the same degree that venison is, but what a wonderful flavor. We had it twice, with a Barolo and Cab. It had the pureness to let the Barolo shine forth, but definitely had the meat for the Cab. | | | |
