Going to make jambalaya with andouille and shrimp tonight. A not-too-spicy style.
Wine recommendations anyone?
Would a Zin go with this do you think?
In theory, there is no difference between theory and practice. In practice, there is... .ps - friends don't let friends eat farmed salmon.

I think Zin would be a great choice Kpak

Agree with Eric. I'd opt for something with power rather than elegance. You could also probably serve a moderately sweet wine like an Auslese or Spatlese.

Zin (but one with some acidity) or Beaujolais.

Thanks. I pulled out a 2000 Burgess, 2000 St. Francis Old Vines and 1999 Clos la Chance.
I also have a 2000 Ridge Lytton Springs that I might want to get rid of...
None of them appear to be awesome wines but should be able to stand up to the flavors.
?

Thanks VC gang. The Zin was a perfect match. The Gallo zin was past it's likeability but the Burgess had just the right stuff to go with the jambalaya and enough afterwards to get me through the dishwashing phase of the evening.
