In theory, there is no difference between theory and practice. In practice, there is... .ps - friends don't let friends eat farmed salmon.

Santa Barbara Spot Prawns last night.  Arrived live, marinated in EVO, garlic, salt, pepper, white wine.  Raining hard so no grill, done on the stove.  Tear off the head and suck like crawfish.  Tails were amazingly sweet and tender.  And I can't believe my 4 1/2 year old son sucked some head!!

Paca for lunch. At a local cafe + bar located on a dirt road in the agricultural region near San Carlos, CR. Tastes like chicken.

Grilled some fresh sardines on the stove (about 7 inches long) in olive oil with salt and pepper. Served with a green salad and oven roasted red potatoes.

Dinner at Dahlia Lounge.

Honey lacquered pork belly, chinese black bean, congee, radish pickle
Wood grilled troll caught king salmon, Anson Mills grits, smokey bacon, English peas, grain mustard
Spit roasted Berkshire pork rack, grilled Spring onions, watercress, rice beans, green garlic
Doughnuts with seasonal jam (served in a white paper bag with powdered sugar, a la Cafe de Monde)
Tom’s (Douglas) world famous crème caramel

Wife and I each ate half of the entree, then traded plates. So bloated this AM :-P
