anyone here think that mustard + wine is one of the true ultimate pairings?  anyone here enjoy it as much as they they do with wine?  there are many brands (Grey Poupon Mustard anyone?) what do you like?

My "go to" Dijon mustards are Edmond Fallot and Maille.  When I am in Vermont, I usually pick up a boutique mustard, often with maple, horseradish, or both in it.

Jimmy's right.  Go with Fallot but try and buy the Bourgogne Mustard rather than the Dijon.  Not surprisingly, Burgundian varietals go fantastically well with Dijon imo.

Mustard is best (for me) on hot dogs, brats, sausages of all type, generally with onions or kraut. While I don't doubt there may be a wine that pairs well with this sort of food, for me this screams for beer.

I have successfully paired wine and mustard in sauces for pork or game. Merlot and mustard work well. Brandy and mustard. Honey mustard and white wine for fish...
But I do agree that you absolutely cannot have dogs or wurst without it! And Beer!  Love the hotter mustards with grilled sausages.

However, I will admit that I've never intentionally paired a wine with mustard.

i agree on all of the sentiments of a good brat sausage, some onions and a nice dallop of dijon mustard. one mustard that ive been using alot lately when i grill sausages on my kitchen countertop or just for hot dogs is this new flavor from Grey Poupon Mustard. its called Hearty Spicy Brown and its got this finely diced yellow onions in it that give it a really bold taste. it makes the sausages or hot dogs i grill to taste better i gotta say. theres more info on that flavor on www.greypoupon.com
