Juggernt,

Any interest in sharing that secret?

BTW, how was the 2000 Cantemerle?

Juggernt,

The Cantemerle was nice. We served it with Bistecca Fiorentina, and it really brought out the character of the grilled meat and herbs, especially the rosemary. I posted a tasting note.

The secret to the chocolate ice cream was two-fold. First, plenty of egg yolks, like 9 in one batch. Second, dark chocolate powder, not chopped-up chocolate (and IMO dark chocolate is the only way to go).

In theory, there is no difference between theory and practice. In practice, there is...

Russian Beef Stroganoff
Side salad
Nutella Brownies (thanks again Lorrie!)

Recipe adapted from epicurious.com:
2 pounds of beef chuck, cubed
2 tablespoons EVOO
6 tablespoons (3/4 stick) butter
1/2 cup finely chopped shallots
1 pound small button mushrooms, thickly sliced
1 cup canned beef broth
1 cup low fat sour cream
2 tablespoons Dijon mustard
12 ounces wide egg noodles
1 tablespoon paprika

Preheat oven to 350.

Heat oil in heavy large skillet over high heat until very hot. Throw in cubed beef. Sprinkle with salt and pepper. Cook until medium rarish. Transfer beef into another bowl.

Melt 2 tablespoons butter in same skillet over medium-high heat. Add chopped shallots and sauté until tender, scraping up browned bits, about 2 minutes. Add button mushrooms. Sprinkle with pepper and sauté until liquid evaporates, about 12 minutes. Add beef broth. Simmer until liquid thickens and just coats mushrooms, about 10 minutes. Stir in sour cream and Dijon mustard. Add meat and any accumulated juices from baking sheet. Simmer over medium-low heat until meat is heated through but still medium-rare, about 2 minutes. Season to taste with salt and pepper.

Cook noodles in large pot of boiling salted water until tender, about 8 minutes. Drain.

Coat noodles with creamy mixture. Toss evenly. Sprinkle with paprika.

Bake in a casserole dish at 350 for 30 minutes.

It should work if your file size is under 60 kb.

This is Sophie, our new standard poodle puppy.  She is 10 weeks old and already a huge pill.Â
