Eating one right now. I used fresh baked Vietnamese french bread, whipped cream cheese, and bacon. It's very good and very simple. Thanks for the idea!

For lunch:
Pho...so good on a day like this with freezing rain

For dinner:
I made some creamy potato soup IN MY BRAND NEW STAUB LA COCETTE!!!

3 tbsp of unsalted butter
1 medium sized onion, diced
3 potatoes, diced
1 small carrot, diced
3 cups of chicken broth
2 oz of cream cheese
1 1/2 cup of milk
3 oz of grated sharp cheddar
Salt and pepper to taste

In a dutch oven:

Melt butter in pan over med heat.
Add the onions, garlic, and carrots, stir until translucent.
Add potatoes, stir until opaque.
Add chicken broth.
Simmer for 30-45 minutes.

Put 1/4 of the mixture into a blender, puree for 5 seconds with cream cheese and milk.
Dump that mixture into a separate big bowl or pot.
Repeat with the rest that is cooking in the pot.
Dump all of the pureed mixture back into the original pot.
Add cheddar and stir.
Season with salt and pepper to taste.
